Singaporean chili crab, originated by chef Cher Yam Tian in the 1950s, is largely considered the national dish of the island nation. Found throughout Southeast Asia, the dish is typically made with hard-shell crabs (in Singapore, they use mud crabs), stir-fried in a sweet-and-spicy tomato sauce. This version has all the flavors of the rich, thick sauce but uses tofu as a plant-based alternative to crab.
